NTFS & FAT are both file systems. They are two different approaches used to store data in a partition in a structured way. NTFS stands for New Technology File System while FAT stands for File Allocation Table.
There are a lot of diifferences among them, but i will mention what can be understood by a normal user. NTFS partitions allow storing files of any size, while in FAT, the maximum allowed file size is 4GB. Also, NTFS gives high performance for large volumes of data while FAT gives high performance for smaller volumes.
Due to the above & many other reasons, NTFS is preferred.
